Ingredients (10)

  • 150 g noodles (e.g., egg noodles or udon)
  • 1 carrot, cut into thin strips
  • ½ cucumber, cut into thin strips
  • 100 g bean sprouts
  • 2 scallions, sliced into rings
  • Optional: bell pepper or small zucchini, cut into strips
  • 200 g shrimp
  • Roasted sesame seeds
  • Crispy Chili Mayonnaise
  • Optional: Cilantro or mint

Instructions(6)

  • 1Cookthe noodles until al dente.
  • 2Chopall the vegetables and fry or stir-fry the shrimp until cooked with a little oil, salt, and pepper.
  • 3Spoonnoodles into bowls.
  • 4Placethe shrimp on top of the noodles and garnish the rest of the noodle bowl with the vegetables.
  • 5Drizzlegenerously with Crispy Chili Mayo.
  • 6Sprinklewith sesame seeds and fresh herbs, if desired.
