Vegan potato wedges with vegan mayonnaise

- 4 large potatoes, cut into wedges
- 2 tablespoons of olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon of garlic powder
- Salt and pepper to taste
- ½ cup vegan mayonnaise
- 1 chive, finely chopped (optional, for garnish)

Preheat the oven to 220°C.

Place the potato slices in a large bowl and drizzle with olive oil. Mix well so that the potatoes are evenly coated with oil.

Add the smoked paprika, garlic powder, salt and pepper to the potato slices. Mix again to distribute the spices evenly.

Place the potato wedges on a baking sheet lined with baking paper, making sure they are in a single layer.

Bake the potato wedges in the oven for 25-30 minutes, or until golden brown and crispy. Turn them over halfway through the baking time for even browning.

Serve the vegan mayonnaise in a bowl while the wedges bake.

Remove the potato wedges from the oven and let them cool briefly.
