- 200 g fresh salmon fillet cut into cubes
- 200 g sushi rice
- 1 tbsp rice vinegar
- 1 tsp sugar
- 1 sliced avocado
- 1 cucumber cut into thin slices
- 1 carrot cut into thin strips
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 1 tbsp sesame seeds
- Edamame beans
- 1 spring onion, cut into rings
- Optional: cilantro and or seaweed salad
- Oliehoorn Brander-Mayonnaise

Cook the sushi rice according to the instructions on the package.

In a small bowl, mix the rice vinegar and sugar, and stir into the hot rice. Let the rice cool to room temperature.

Mix the cubed salmon with 2 tbsp. soy sauce and 1 tsp. sesame oil. Let the salmon marinate for a few minutes.

Divide the cooled sushi rice between two bowls.

Add the marinated salmon, avocado, cucumber, carrot, seaweed salad and edamame beans.

Sprinkle with sesame seeds and spring onion.
