Grilled chicken with chipotle-honey glaze

Sweet Chili Chipotle Sauce

  • 8 chicken drumsticks or legs (or chicken thighs)
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • ½ teaspoon black pepper
  • 3 tablespoons sweet chipotle sauce (ready-made or homemade, see tip)
  • 1 tablespoon of honey
  • 1 tablespoon of ketchup
  • 1 teaspoon apple cider vinegar or lime juice
  • Optional: a pinch of smoked paprika or chili flakes for extra spice

Instructions(4)

  • 1Ina small bowl, mixall the ingredients for the glaze and set aside. Pat the chicken dry and rub with olive oil, salt and pepper.
  • 2Provideindirect heat (coals on the sides or a gas BBQ on medium setting). Let the chicken cook gently on the cooler side of the BBQ with the lid closed. Cook for about 30-35 minutes until the skin begins to brown and the chicken is done.
  • 3Soakthe chicken with the chipotle-honey glaze. Then place the chicken pieces over direct heat for another 5-10 minutes to allow the sauce to caramelize. Turn frequently and keep at it - the sugar in the glaze can burn quickly!
  • 4Letthe chicken rest for a few minutes. Serve with some extra chipotle sauce on the side.

Grilled corn salad with lime & cilantro

Sweet Chili Chipotle Sauce

  • 2-3 corn cobs
  • 1 red bell bell pepper, in small cubes
  • ½ red onion, finely chopped
  • 1 bunch of fresh cilantro, coarsely chopped
  • 1 spring onion, in rings
  • 1 avocado, sliced
  • Juice of 1 lime
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • Optional: 50 g feta or goat cheese (crumbled)
  • Optional: pinch of chili flakes for some extra spice

  • 1Pre-cookthe corn cobs for 5 min (if fresh), then grill until charred (±10 min).
  • 2Cutthe corn kernels from the cob.
  • 3Doegrilled corn, bell bell pepper, onion, spring onion and cilantro in a bowl.
  • 4Addlime juice, olive oil, salt and pepper. Mix well.
  • 5Addavocado or feta just before serving.
  • 6Garnishwith the herb salad and additional capers, if desired, for a fresh, salty touch.
