Grilled chicken with cucumber salad and dill mayonnaise

Ingredients (14)
- 2 chicken breasts
- 1 tablespoon of olive oil
- 1 teaspoon lemon zest
- 1 tablespoon of lemon juice
- 1 teaspoon of dried oregano
- ½ teaspoon garlic powder
- 1 cucumber
- 2 tablespoons of Oliehoorn mayonnaise
- 1 tablespoon of Greek yogurt
- 1 teaspoon lemon juice
- 1 clove of garlic finely chopped
- 1 tablespoon fresh chopped dill
- 1 tablespoon fresh chopped mint
- Salt and pepper to taste

Marinate the chicken with olive oil, lemon zest, lemon juice, oregano, garlic powder, salt and pepper. Let it soak for at least 15 minutes (longer = more flavor!).

Grill the chicken breasts in a grill pan or on the BBQ, about 6-8 minutes per side, until golden brown and cooked through.

Let the chicken rest for a while and slice it.

Thinly slice the cucumber with a mandolin or sharp knife.

Mix the Oliehoorn mayonnaise, Greek yogurt, lemon juice, garlic, mint and dill in a bowl.

Add the cucumber and mix well.

Season with salt and pepper and let the salad soak in the refrigerator for extra flavor.
