Bavette

Truffle Mayonnaise

  • 500 grams of bavette (flank steak)
  • 2 tablespoons of olive oil
  • Salt and freshly ground black pepper to taste

Instructions(3)

  • 1Spreadthe bavette on both sides with salt and freshly ground black pepper. Rub the meat lightly with olive oil.
  • 2Heata grill pan or barbecue over high heat. Grill the bavette for about 3-4 minutes on each side for medium-rare, or longer as desired.
  • 3Letthe meat rest for a few minutes before slicing into thin slices.

Puffed cherry tomatoes and roasted carrots

Truffle Mayonnaise

  • 250 grams of cherry tomatoes
  • 4-6 carrots, peeled and cut into pieces
  • 2 tablespoons of olive oil
  • Salt and freshly ground black pepper to taste
  • Fresh thyme leaves
  • Fresh rosemary

  • 1Preheatthe oven to 200°C.
  • 2Mixthe carrots with olive oil, salt, pepper and rosemary.
  • 3Placethem on a baking sheet lined with baking paper and roast for about 25-30 minutes, until cooked and slightly crispy.
  • 4Meanwhile, mixthe cherry tomatoes with olive oil, salt, pepper and thyme.
  • 5Addthe tomatoes to the griddle for the last 10-15 minutes, allowing them to soften and begin to burst open without burning.
  • 6Placethe slices of grilled bavette on a serving platter.
  • 7Distributethe roasted carrots and puffed cherry tomatoes around it.
  • 8Servewith creamy truffle mayonnaise and garnish with fresh herbs or some pomegranate seeds, if desired.
