Mayonaise 80%

  • 500 grams of veal loin
  • Salt and freshly ground black pepper
  • Olive Oil
  • Fresh herbs such as rosemary and thyme (optional)

Instructions(5)

  • 1Preheatthe oven to 180°C.
  • 2Spreadthe veal loin with salt and pepper. Add fresh herbs if necessary.
  • 3Heatolive oil in an ovenproof pan and fry the veal loin all around until golden brown.
  • 4Setthe pan in the oven and roast for 20-25 minutes until medium-rare (core temperature ±52-54°C).
  • 5Letthe meat cool, wrap it in foil and put it in the refrigerator to get completely cold.

Tuna mayonnaise and herb salad

Mayonaise 80%

  • 1 can of tuna on water, drained
  • ½ cup of Brander mayonnaise
  • 2 tablespoons of capers
  • 1 tablespoon of lemon juice
  • Salt and freshly ground black pepper to taste
  • Mixed herbs such as parsley, basil, tarragon and chervil
  • Extra virgin olive oil
  • Extra lemon juice to taste

  • 1Addthe tuna, Brander mayonnaise, capers, lemon juice, salt and pepper toa blender. Blend until a smooth, creamy sauce forms.
  • 2Tasteand add additional lemon juice, salt or pepper to taste.
  • 3Mixthe fresh herbs with a dash of olive oil and a few drops of lemon juice just before serving for a fresh herb salad.
  • 4Cutthe cooled veal loin into thin slices and place on a serving platter.
  • 5Spoonthe tuna mayonnaise generously over it.
  • 6Garnishwith the herb salad and additional capers, if desired, for a fresh, salty touch.
