The Calf Mouse

Mayonaise 80%

  • 800 g calf mouse
  • 100 g pancetta, thinly sliced
  • 8-10 fresh sage leaves
  • 2 cloves of garlic, finely chopped
  • 2 tablespoons of olive oil
  • 1 tablespoon of butter
  • Salt and pepper to taste
  • Kitchen Rope

Instructions(6)

  • 1Sprinklethe veal shank with salt and pepper.
  • 2Placethe sage leaves evenly over the meat, then cover with the slices of pancetta.
  • 3Now tiethe whole thing tightly with kitchen twine to keep the pancetta and sage in place.
  • 4Heat2 tablespoons of olive oil in a frying pan over medium-high heat, and fry the meat on all sides until golden brown, about 6-8 minutes.
  • 5Addthe chopped garlic and sauté for another 1 minute.
  • 6Removethe veal from the pan and let it rest under aluminum foil for 10 minutes before cutting.

The Spinach

  • 400 g fresh spinach
  • 1 clove of garlic, finely chopped
  • 1 tablespoon of olive oil
  • Pinch of nutmeg
  • Salt and pepper to taste

Instructions(3)

  • 1Heat1 tablespoon of olive oil in a large skillet and sauté the garlic for 1 minute until fragrant.
  • 2Addthe fresh spinach and stir-fry quickly over medium-high heat until the spinach has just shrunk, about 3-4 minutes.
  • 3Addsalt, pepper and a pinch of nutmeg to taste.

The bay potatoes

  • 600 g small new potatoes
  • 3-4 bay leaves
  • 2 tablespoons of olive oil
  • 1 teaspoon of rosemary
  • Salt and pepper to taste
  • Oliehoorn Mayonnaise and/or Curry sauce

Instructions(4)

  • 1Preheatthe oven to 200°C.
  • 2Cutthe new potatoes in half.
  • 3Mixthe halved new potatoes with olive oil, rosemary, bay leaves, salt and pepper.
  • 4Spreadthe potatoes on a baking sheet and roast in the oven for 25-30 minutes, until golden brown and crispy. Scoop over halfway through.
