Roasted asparagus with truffle mayo and Parmesan cheese
Indispensable on the table! Asparagus, Parmesan cheese and of course; Truffle mayonnaise. The perfect side dish for a delicious Christmas dinner.

Preheat the oven to 200°C.

Break off the hard ends of the asparagus (they snap naturally in the right place).

Place the asparagus on a baking sheet and drizzle well with olive oil, salt and pepper.

Roast the asparagus in the oven for 10-12 minutes, until tender and slightly caramelized but still slightly crisp. Be careful not to let them get too soft.

Remove the asparagus from the oven and place on a serving platter.

Now pipe the Oliehoorn truffle mayonnaise in thin lines over the roasted asparagus.

Sprinkle the grated or shaved Parmesan cheese and lemon zest over the asparagus.

Add toasted almond slivers, if desired, for a crunchy texture.
