Truffle Mayonnaise

  • 2 fresh rolls (e.g. ciabatta or a multigrain bun)
  • 150 g thinly sliced roast beef
  • 30 g Parmesan cheese in flakes
  • 20 g pine nuts
  • A handful of arugula
  • Oliehoorn truffle mayonnaise
  • Pinch of black pepper

    Toast the pine nuts in a dry skillet until golden brown. Let them cool gently.

    Cut open the buns and spread the bottom with truffle mayonnaise.

    Top the sandwiches with a layer of arugula.

    Divide the roast beef evenly between the sandwiches.

    Sprinkle the Parmesan cheese and toasted pine nuts over the roast beef.

    Top with additional truffle mayonnaise.
