Mushroom quiche salad
The most beautiful and delicious salad on the Christmas table is how you make it! And especially for the holidays: our classic mayonnaise with a fresh twist.

Ingredients (9)
- 4 tablespoons Oliehoorn Mayonnaise 80%
- 200 grams of smoked salmon, sliced
- 6-8 radishes, in thin slices
- 1 cup cooked soybeans (edamame), cooled
- 1 cucumber, sliced
- Mixed green leaf lettuce
- Fresh dill (for garnish)
- Garden Cress
- Salmon eggs

Start by making the dressing. Mix the mayonnaise, lime juice, lime zest and fresh dill in a bowl.

Season to taste with salt and pepper. Taste and adjust seasoning to your liking. Place the dressing in the refrigerator while you prepare the salad.

Build the Christmas wreath salad on a large plate or serving dish. Start with a layer of mixed green leaf lettuce.

Arrange the slices of smoked salmon in a circle on top of the lettuce to form the base of the wreath.

Place the thin slices of fennel on top of the salmon and spread evenly.

Add the radish and cucumber slices, and sprinkle with the cooked soybeans.

Garnish the salad with the salmon eggs fresh dill and cress.

Pour some of the lime-dill mayonnaise dressing evenly over the Christmas wreath salad and serve the remaining portion of it alongside the dish.
